Fresh mozzarella has a short shelf life of about a week. It is usually kept dipped in water or whey. It’s low moisture variation however, can be stored in the refrigerator for weeks wrapped in parchment paper and plastic.

Blue cheese is to be wrapped in foil or parchment paper or can be frozen in an airtight container. Once you open a pack of blue cheese, you can use it for upto 3 weeks. Frozen blue cheese can be used for months.
